Honey Process

I've seen coffees labeled "honey process" before. What does that mean?

    It means it's delicious (probably)....

    Honey process is similar to the natural process but they remove a portion of the skin/pulp and leave the cherry with the mucilage out to dry like a natural process coffee. It has nothing to do with bees.

    Honey process coffees are probably some of my favorite coffees.
